Annotation: The names of folk cuisine dishes are still a persistent ethnographic feature in both areas of the material and spiritual culture of the people. Those mapping objects of Section V "Meals" of the Programme of Lexical Atlas of the Russian Folkish Patois, which most often have traditional names, all-Russian distribution, but situationally local semantic filling, connected with the use of natural (wild-growing) plant components in the realities denoted by them, are the source of our observation. In the stories of the inhabitants of Kostroma villages about the times of World War II and after it, the traditional dishes of peasant food – bread, pies, flatbread, stew, cabbage soup – appear in their surrogate form as markers of shoddy food and poor state of the family. The conclusion is made that the questions of the Lexical Atlas of Russian Folkish Patois programme contribute to the study of inexhaustible lexical wealth of Russian folkish patois, including "Dishes of folk Kostroma cuisine" in relation to the knowledge of various motivational bases of their nomination, peculiarities of semantic structure and conditions of functioning.
